Description
Organic Tuscan semolina pasta made from 100% ancient grains (Cappelli, Khorasan and/or other heritage varieties). Bronze-drawn for a rough surface texture.
Slow-dried for 3 days (72 hours) at temperatures below 38°C.
Foglie d’Olivo is a pasta shape particularly suited to rich, dense sauces, such as hearty meat ragù or creamy cheese-based recipes like the Roman classic cacio e pepe. -

We recommend storing the product at temperatures below 18°C and at a relative humidity of 65%, or in the refrigerator, to discourage insect proliferation.

As a result, the semolina obtained is always different and may affect the pasta-making process and therefore the pasta’s characteristics, such as cooking time, gluten strength, and the amount of starch released during cooking.
